The pistachio shrub is approximately ten feet high and bears purplish pink peppercorns. At maturity, the shells split to reveal the green oblong fruit that is pistachio. Commercial plantations began in the nineteenth century in Iran and it remains one of the largest producing country, known for its quality of pistachio fruits.
These walnuts have been hand harvested in the Périgord and are from the Franquette variety. They are granted ‘AOP Noix du Périgord’ label. This is a quality label which ensures the production and the transformation of walnuts within the geographical area of origin. Each walnut is opened manually in order to remove the superb kernels. They make a perfect snack. If slightly toasted on a dry pan they can be added to a green leaf salad seasoned with a walnut oil dressing. Perfect for confectionary as well.
