  2. Albert Ménès - Confit de Pétales de Rose

    This 'Confit de Pétales de Rose’ is a preserve made from rose petals from the ‘Centifolia’ variety also called Rose de Mai and it expresses the subtle flavours of this exceptional flower. The roses are hand harvested at dawn in the region of Grasse (Provence) during the month of May. The fragile petals are hand picked precisely one by one and placed in each jar of jelly. Exquisite for breakfast and afternoon tea, on toast or scones. This jelly is absolutely natural, no artificial colours or flavours are added. Its colour and fragrance are inimitable.

  3. Maison Escourrou - Cassoulet de Castelnaudary

    The ultimate classic dish from the South West of France, with duck confit, white beans and grilled Toulouse sausages. Gently pour the contents of the tin into your earthenware dish previously rubbed with a clove of garlic. Add a glass of water. Place in a hot oven (180º). Leave for 30 to 60 minutes. Wonderful served with a green leaf salad and a earthy style red. Perfect for two servings.

  5. Maison Escourrou - Confit de Canard

    To serve the confit it simply needs to be reheated in a hot oven until the skin is brown and crispy (10 to 15 minutes). Use the leftover fat to roast some potatoes and garlic as an accompaniment and add green beans sautéed in duck fat and top them with fresh cut parsley. Confit onions are also ideal with duck confit. It can also be prepared in a pan by frying 3 minutes skin side down, 3 minutes skin side up then 2 minutes skin side down again. Enjoy it with a robust red wine – a pure delight!

  10. Haven Smokehouse - smoked salmon

    The Haven Smokehouse is set on the shores of the beautiful Sheephaven Bay, in the wild rugged landscape of Donegal. The salmon is smoked with 10,000 year old turf from the mountains of Donegal. Beechwood is also used which balances the deepness of the turf and adds a note of sweetness. The result is a smoked salmon that is unique.
    At Terroirs, we are selling the salmon unsliced (rather than paper-thin slicing) as it allows the salt and smoke to migrate through the flesh slowly, ensuring an even balance of flavours and melt in the mouth feel throughout the whole fish.
