The Cabernet Sauvignon is crafted from grapes harvested from 70+ year old vines that are dry grown or unirrigated. The grapes are hand picked, processed in small 2 tonne fermenters, hand plunged or punched and pressed using traditional wine making methods. The wine is then aged for 20 months in a combination of high-end French and American oak, 25% being new oak and the balance one and two year old oak. The age of the vines ensures balanced, low yielding Cabernet which has great varietal characters and definition. These varietal characters are prominent, with blueberry and violets and hints of spice. The palate is flavoursome and tight with a balanced fine tannin finish. This wine is drinking well now but will benefit from careful cellaring.

The Domaine
O’Dwyer Wines produce premium wines using grapes grown on their Sweet Briar vineyard in the Clare Valley, South Australia. A boutique producer that focusses on making the finest quality wine possible, O’Dwyer Wines was created by Donal and Judith O’Dwyer soon after they purchased the small, beautiful, well established Sweet Briar vineyard.

"This turned out to be one of the most amazing wines I have ever tasted… This winery, O’Dwyer, might well be the next Henschke or Grange from down under – this is a 100% Cabernet. It turned a lot of heads recently during a blind tasting with some big California names like Harlan and Bryant Family" Frank Melis, Golden Gate Wine Cellars, USA.

Food Pairing
Beef, duck, lamb and roast chicken.
