This cuvée is made with the Pinot Noirs from our old vines in Vertus. Clement weather, low yields and very stringent sorting are necessary to make this red wine a success. The Pinots are partially destemmed and then macerated for about twelve days. The alcoholic fermentation is carried out with natural yeast. The wines are matured in casks for 18 months.
Relatively dark colour. Subtle nose, typically pinot. Nice full fruit palate, A change from Burgundy. Worth a try.
The Domaine Pierre Larmandier is passionate about his vineyards, which are around fifty separate parcels, spread across the Cotes des Blancs in the grand cru villages of Cramant, Chouilly, Oger and Avize, and the premier cru of Vertus. All but three of the parcels(representing 0.5 hectares) are farmed using non-officially certified biodynamic methods. Wines are made only from their own 15 hectares of vines, which are an average 33 years old. Working only with natural yeasts the influence of 'terroir' is all important to the style of his wines, so much so that he uses a minimum 'dosage' (if at all) so as not to mask the wines natural characteristics.
Food Pairing Enjoy with seafood and fish - especially freshwater varieties in a light sauce. Wonderful with a plate of oysters, or a selection of fresh goats cheese... and would make any early summer picnic special!
