  1. Didier Dagueneau Pouilly-Fumé Silex

Produced from grapes sourced on the higher slopes of the village of Saint Adelaine. Here the soils have little clay buy high amounts of silex (flint). Relatively old vines, which are heavily cropped given very low yields of perfect fruit. This wine is Dagueneau's grand cru. Designed for ageing, it will be quite closed and austere in it's youth, but will reward cellaring.

  2. Château Duhart Milon Rothschild

A strong case can be made that this is the finest Duhart produced since the 1982. The colour is a saturated dark ruby/purple. The bouquet offers aromas of blackberry fruit intermixed with licorice, minerals, and dried herbs. Rich and intense, with considerable finesse, medium to full body, and outstanding concentration and purity. It reflects the increased attention Lafite's administrator, Charles Chevalier, has been giving this nearby estate.

  3. Elderton Command Shiraz 1995

...Sweet and dense in the mouth, but given verve by pungent minerality and firm acidity. Strong element of tarry oak. A powerfully structured wine...

  4. Château Cos d'Estournel, 2ème Grand Cru Classé, Saint-Estèphe

According to Robert Parker: "The 1970 Cos d'Estournel's colour remains an impressive dark garnet with ruby/purple tints. The wine is medium to full-bodied, tannic, rustic, and concentrated…It will keep for another 25 years." 89 points Wine Spectator. Four star rating from Michael Broadbent.

  6. Giorgio Primo La Massa 2001

"Broadly textured and rich, with dark aromatics leaning toward coffee, blackberry and a sniff of lemon zest. Dense plum, toast and licorice notes control the palate, and then a clean blast of chocolate rushes through. Very sweet and unctuous for Chianti, almost like dessert in a glass." Wine Enthusiast 92 points
"Velvety and rich, with plum, berry and coffee character. Full-bodied, with round tannins and a long chocolate, vanilla and berry aftertaste. Tight and refined now, but shows serious structure." Best after 2010. 5,000 cases only made." Wine Spectator 91 points

  7. Doisy-Daëne 1975

Like many distinguished, elderly Sauternes it has shed some of its richness but still packs a punch in both content and intensity. There is more today of the caramel and dried fruit side than those marmalade notes more typical of younger Sauternes/ Barsacs. It tastes exquisite on its own, and would make a very fine match with well chosen, not too sweet puddings, or perhaps best simply with some dried fruit.

  8. Château Léoville Barton

Deep ruby. Wonderfully perfumed nose offers cassis, minerals, tobacco, flowers, mocha and truffle. Bright, mineral-driven and concentrated, with terrific underlying backbone giving energy and definition to the dark berry, mineral and chocolate flavours. There's a floral lift here that's exhilarating to find in the very ripe 2005 vintage. Finishes very long and classy, with a firm tannic spine. An outstanding vintage for this wine.96 Points Wine Spectator

  9. Fonseca Vintage port 1085

Deep inky ruby with a broad red rim just turning to brick at the edge. Generous and seductive nose redolent of blackcurrant and cherry. Dense, luscious black fruit laced with dark chocolate, liquorice and roasted coffee. Exotic herbal and resiny scents emerge an hour after decanting. Later the fruit becomes more luscious and creamier, with rich raspberry jam flavours overlaying the dark fruity base. The full round palate is supported by thick well integrated tannins and delivers an abundance of luscious chocolate and blackcurrant flavour which lingers into the long velvety finish. A wine poised between youth and maturity.

  10. Moët & Chandon - Dom Perignon

"A rich and smoky Champagne in a graceful package, with a beautiful, fine-grained texture to it and layers of flavor-biscuit, candied lemon peel, coffee liqueur, chamomile, pine, crystallized honey and wood smoke. This is the haute couture of the Champagne world-all about elegance, texture and attention to detail. Drink now through 2027."
