Grown on the island of Madagascar, these green peppercorns are picked from the pepper vine when still green and tender. As soon as they are harvested, the berries are sorted by hand before being soaked in brine. The subtle flavour, less pungent than black pepper, delicately perfumes terrines, marinades and fish such as monkfish. Green pepper sauce adds delicious spice to game and duck.
