The myriad grape varieties really do add complexity and interest. This is a wine of substance and delicacy, with subtle perfume; a fine example of what the south of France can still do much better than anywhere else.

Satin-Smooth Corbières made by our friends at their mini-coop in the village of Embres. This is a wine that explodes with smooth, young, ripe black fruits. The blend of Carignan, Grenache, Syrah and Cinsault gives a soft, easy-drinking style with luscious red and black flavours. Silky palate with with a touch of spiciness. This wine makes us feel hungry! Lamb casserole, roast beef, roast chicken would go perfectly. If there was ever a perfect example of an inexpensive wine that can be enjoyed everyday, it would be Castelmaure 2012. The truth is – it's sensational!

Saint Véran is an appellation in the Mâconnais region next to that of Pouilly-Fuissé. The grape of choice is of course Chardonnay and Robert Denogent's wines are among the best we have ever tasted from the Mâconnais. This Saint Véran is powerful, with a a complex nose reminiscent of Bourgognes Blanc from further north. Denogent's wines are fermented using indigenous yeasts and are aged in oak for up to 18 month which is unusual in this part of the appellation. Very rich and complex, a bit flinty and with bright acidity.

Pale golden colour in the glass, with the faintest hint of green belying its youth, this Chardonnay opens with rich and intense aromas of lemon, lime leaf, citrus flowers, and a touch of honey before moving into spicy pie crust and a hint of mascarpone creaminess - all topped with a nice flinty finish. The citrus trend continues on the palate with a firm acidity and tropical star fruit. This wine has excellent mouthfeel with big full texture and a mouthcoating creaminess that nicely complements the white stone fruit (nectarine and peach) and slight green apple fruit flavours. On the finish, look for a pleasantly subtle marzipan nuttiness.

'Longitude' is a sublime biodynamic champagne created by one of the most accomplished winemakers in the region, Pierre Lamandier. Superb and pure it shows a wonderful balance on the palate with a textural richness paired with a vivid minerality due to the terroir. Expressive, elegant and long finish. Quite sophisticated.

This wine shows deep dense plum colour with great density. The nose opens with anise and spice before moving into rich layers of blackberry and cherry compote. All that great concentrated fruit is beautifully complemented with barrel tones of vanilla and clove. It is quite youthful and lively on the palate with a good firm acid core - great for food pairing - and abundant velvety tannin. Complex layers of black fruits through the mid palate, with good barrel spice underlayment throughout, are nicely complemented by bright red fruit on the finish. This wine is quite approachable so young, but it will definitely improve with additional time in the bottle, if you've got the patience. If you do plan to drink it now, I'd recommend decanting it in order to help it open up even more.

The wine is made from 70% Merlot and 30% and Cabernet Franc. The majority of the vineyards are 30 year or older. The wine is fermented in concrete tanks, and then aged for 12 months in barriques with about 1/3 new oak used.
Stylistically, there are floral notes to complement the dark cassis fruit, dark chocolate and spice notes. There is also a silky texture and fine-grained tannins that all make for a lovely well-balanced wine.1.5L magnum

100% Sangiovese, single vineyard from very old vines (around 55 to 70 years old) and steep hillside slopes at 1,312 feet a.s.l. Training is Guyot, three to four buds per vine. Crops are less than 1½ tons per acre and extract-packed, harvested by hand after October 10th. The grapes are placed to ferment after a second election of fruit in the winery, at a controlled temperature of 82.4-86° F, macerating on the skins for some 20 days and undergoing full malolactic. The wine is aged 11 months in French barriques and tonneaux (new and 2nd year) and two years in bottle. Colour is deep crimson, the bouquet is rich, complex, intense: ripe black cherries, black berry fruit, spices, white pepper, chocolate, & tobacco on the palate. Great richness and complexity, exquisite balance and an everlasting finish.
