Dom Denizot Pouilly Fumé Blanc, 2023

Thibauld’s Pouilly-Fumé comes from two parcels of densely-planted old vines. Each vineyard smaller than one hectare: one parcel is located on the chalky soils in the village of Boisfleury, and the other is on a hillside of flint and clay in the village of Saint Andelain. The hand-harvested Sauvignon Blanc grapes from these two parcels are fermented and aged in a mix of concrete and steel tanks.This limpid, pale yellow-green wine unfurls gradually with aromas of white flowers, kaffir-lime leaves, and lemongrass trading places with apricots, pink grapefruit, and especially fresh fennel as the nose evolves over time. On the palate, the texture is silky chiffon, with exotic citrus flavours seasoned with wild thyme, anise, and herbal sea salt, while the refreshing, mineral-driven finish lingers forever. Drink now for the wine’s electrifying energy and primary fruit, or tuck away in a cool cellar for five years or more.
