This bar encapsulates the subtle marriage between the fruity sweetness of this great chocolate from Peru and the crunchiness of the Soba Cha with its toasted and generous notes.
Encuentro or ‘Encounter’ in English is the name of Candice and Antoine’s chocolate factory. Their chocolate adventure began in 2008 while living in the Dominican Republic. Four years later, the couple created their chocolate factory in Punta Cana in conjunction with local cooperatives and they employ 15 people. In 2013, however, they were forced to abandon the project under threat and return to France. Candice and Antoine were determined to produce their own ‘bean to bar’ chocolate and in 2016 they opened their factory just outside Paris. Two years later they moved to Lille, in the north of France and in 2021 after the restoration of an old spinning mill, the couple opened a brand new factory and shop. Needless to say that beans - grown on farms which the couple are familiar with - are sourced and imported directly from various regions of the world. All cocoa beans are certified organic and pesticide free.
