This fleur de sel is the highest grade of French sea salt. The salt is harvested manually from the surface of the water. Fleur de sel is characterized by a fine, white crystallization. A flavoursome finishing touch to any dishes and delicious sprinkled on foie gras.
Since 2002, Emmanuel Violleau and Nathalie Lechat have been harvesting salt from their salt marshes located in Pays de Retz, south of the Loire estuary, near the Atlantic ocean.
