This Affinato DOP is obtained from Trebbiano and Lambrusco grapes from the province of Modena. Slow fermentation and long ageing in wooden barrels are the only processes permitted by the rules of production, which were drawn up in 1986 and received recognition in 2000 by the European Community, and DOP regulations. The only container permitted is the special glass bottle designed by G. Giugiaro. Affinato was aged for 12 years in barrels of different woods as to acquire a definite and distinctive texture and taste. The colour is shiny brown and the texture is thick and velvety.
