The unique path of the Colline Inspirée is that it is vinified and aged entirely in barrel. This process does not add any oak flavouring to the wine as the barrels are old. What it does add is a sumptuous essence of oxidation, similar to a fine aged white burgundy.Opulent and creamy, showing gorgeous hazelnut overtones and fresh baked brioche undertones. Class!
A strong-willed man, Emmanuel Lassaigne has made remarkable efforts in giving the terroir of Montgueux a new lease of life, and he shows no sign of taking all the credit for it. He simply continues to produce rare Champagnes that show consistent elegance, and the characteristics of his terroir.
